Dad’s Mushroom & Tofu Larb

Dad just makes every video 10x better. Give this a thumbs up, if you agree! ::RECIPE:: Ingredients:
1 lb mushrooms (oyster, shiitake, wood ear), chopped
14 oz extra firm tofu, finely chopped
1-2 limes, freshly squeezed Fish sauce to taste
Chopped cilantro to taste
Chopped scallions to taste
Torn mint leaves to taste
Chopped bird’s eye chili to taste
Dried ground chili to taste 1 tbsp roasted ground glutinous rice powder
Oil for the pan
Lettuce or cabbage leaves to serve Steps: 1) Heat a pan to medium-high and drizzle oil. Add mushrooms and cook for about 8-10 minutes, or until most of the moisture has evaporated. Stir in the tofu and cook for about 5 minutes. 2) Set aside to slightly cool. Add the rest of the ingredients and combine well. 3) Serve with lettuce or cabbage leaves and enjoy! While I appreciate a green salad from time to time, I have a particular fondness for mayonnaise salads. That side of coleslaw that comes with a diner sandwich or a barbecue platter is never superfluous to me. I can polish off a whole bowl of chicken salad, and I subconsciously leave enough space on my plate for potato salad whenever I’m at a potluck or picnic. I sometimes even mix a dollop of mayonnaise into cold leftovers to make a sort of impromptu salad whenever I get sudden hunger pangs late at night. One of my favorite types of mayonnaise salads is actually my favorite type of potato salad. Throughout South America, potato salad is referred to as ensalada rusa, or “Russian salad.” Cubes of cold potato get dressed in a generous amount of creamy (often homemade) mayonnaise, and the mixture is interspersed with perfect proportions of blanched diced carrots and peas.
